We all love a Battenberg Cake which got me thinking, how could i make this into a cupcake? And here is the result! Here is what you will need to create these cupcakes; For the Sponge; 175g Butter 175g Caster Sugar 3 Eggs 140g Self-Raising Flour 50g Ground Almonds 1/2 tsp Baking Powder 1/2 tsp Almond Extract 1-2 Drops of Pink Food Colouring For the Buttercream; 125g Softened Butter 500g Icing Sugar 2 tbsp Milk 1/2 tsp Almond Extract Marzipan is optional to decorate Directions - 1) Preheat the oven to 160C Fan and prepare a cupcake tin 2) Beat together the butter, sugar and eggs until light and creamy- I use a KitchenAid but this will work by hand also 3) Add in the flour, ground almonds (it is important to sieve this as there can be lumps and we want a smooth mixture) and baking powder - Mix all of this in 4) Split the mixture evenly into two bowls 5) Add the almond extract to one half of the mixture and mix 6) Add the pink food colouring to the other half and mix 7) Fill two piping bags with each mixture and snip off the end 8) Fill half of the cupcake cakes with the almond mix and the other half with the pink mix 9) Repeat the above again this time putting the alternative mixture (see picture for an example) 10) Bake for 22 minutes or until a skewer comes out clean 11) Leave to cool whilst we make the buttercream 12) Beat the butter until fluffy and pale - Once again i use a KitchenAid - this will still work by hand but may take a bit longer 13) Add in the icing sugar half at a time as no one wants an icing sugar cloud! 14) Once all the icing sugar is added the buttercream will be quite thick so we need to add in some milk to create a silky consistency - you may need slightly more milk but add this in small bits - if you think you have added too much milk you can always add more icing sugar 15) Add in the almond extract and beat 16) This is an optional step but you can split the mixture and colour half pink 17) I piped these cupcakes using a Wilton 1M tip 18) You can then add a layer of marzipan on top of the cupcakes but this is completely optional! 19) Time to eat the delicious cupcakes!
